Agushi seeds - White melon seeds
Preparation: 15 minutes
Cooking: 30 minutes

1- Cut onion, garlic, and tomatoes in small pieces.

2- Slice the mushrooms in small pieces and grate the ginger. 

3- Drain the fresh spinach leaves and put them aside.

4- Grind the agushi seeds and add water the form a paste


5- In a pan pour the olive oil, the veggie broth stock and add your chopped onion and garlic, allow it to fry for some time about 5 minutes.


6- Once onions are golden add your chopped fresh tomatoes grated ginger and hot pepper. Stir to mix all the ingredients. Let it cook for 15 minutes until it becomes a sauce.


7- Add the sliced mushrooms and let them become tender. 5 minutes.


8- Now add your agushi paste to your sauce and mix it with all ingredients. Let it simmer for 5 minutes.

9- Add your drained spinach leaves and stir to mix it well. Let it cook for 5 minutes and it's ready.


Serve with rice or plantains!

  • 1 medium onion
  • 3 big tomatoes
  • 2 cloves of garlic
  • 2 cups of fresh spinach
  • 1 small piece of ginger
  • 1 hot pepper or chili powder
  • 1 cup of mushroom (oyster mushroom)
  • 2 stocks of vegetable broth
  • 4 tablespoons of olive oil
